Food and Music #2

Rice Noodles with Salt and Vinegar Chips?
Cook time- 5 minutes

When choosing a sauce, look for a low/no sodium sauce with minimal ingredients.  

Tip- When you shop at the grocery store, buy foods with minimal ingredients.  If you don’t know what half of the ingredients are on the label of the food you are about to buy, chances are it is not good for you.  

Vanilla Ice Cream with Maple Brown Sugar Oatmeal and Cooked Apple…a healthy dessert…Gluten Free! Egg Free! Soy Free!


I cook the apple to kill what I am allergic to.  To do this, I peel and slice the apple, and then I microwave it on high for 1 minute and 30 seconds.  

The oatmeal can be cooked or uncooked.  Either way works for me!

Friday Favorite

Venice Bakery Cheese Pizza

This is my favorite post race meal, not to mention the only pizza that I can eat.  (See My Freakishly Limited Diet) It is gluten free, nut free, soy free, egg free, sunflower oil free, and legume free.  I do not enjoy cooking, so figuring out how to make a pizza I can eat is not on my To Do List.
I love this pizza.  The crust actually tastes like pizza crust, and there is no wheat!  My kids even love this pizza, and they don’t have food allergies!  

Serves 1-2

I buy this pizza from Whole Foods.  Enjoy!

What drills do you recommend doing to increase foot speed?

I recommend ladder drills and stairs.

Ladder Drill #1

What you need- a speed drill ladder, 50-100m of a flat running surface (track, soccer field)

Make sure you are plenty warmed up.  (A one mile jog, or 5 minutes of jumping rope will do.) Cold muscles are easily pulled with speed drills.

Spread the ladder out about 50m away from where you will start.  Run fast (stride) to the ladder.  Run through the ladder placing one foot in each square.  This is continuous! Repeat 3-4 times.  This will force your foot speed (turnover) to increase.

My Freakishly Limited Diet Part One

I have always had seasonal allergies, but it wasn’t until my early 20’s that I started developing food allergies.  It started with fruits and vegetables.  I would be eating chips and guacamole and then my throat would feel like it was swelling up inside, which made it really hard to swallow.  So avocados were out first, then watermelon, broccoli, pineapple, squash, strawberries, blueberries, oranges, asparagus.  Next came the tree nuts.  Cashews, almonds, Brazil nuts, pistachios.  Then soy and sunflower oil.  No more healthy foods for me.  At least that is what it seemed like.   Continue reading “My Freakishly Limited Diet Part One”
